1 pound pork belly (cut into strips)
2 baby bok choy
Additional ramen toppings including, but not limited to: soft boiled eggs, green onions, sriracha, radishes, etc
Head Country Sweet and Spicy BBQ Rub
Oil
Set up smoker to 265 degrees
Lightly oil and season the pork belly strips.
Place on the smoker and cook until an internal temperature of 203 degrees.
Over the pork belly has finished cooking, set up a grill for high direct heat. Additionally, prepare the ramen noodles and broth and any other toppings desired.
Cut the baby bok choy in half and season.
Place the bok choy over direct heat and cook for 3-4 minutes per side.
In a bowl, place down the noodles, pork belly, bok choy and any additional toppings. Pour ramen broth over and serve immediately.
