Grilled Chicken Satay with Peanut Dipping Sauce

Ingredients
- ½ cup smooth peanut butter
- ¼ cup plus 2 tbsp water
- 4 Tbsp Rub Some Rib
- 2 Tbsp fresh lime juice
- 1¼ pounds boneless, skinless chicken breasts
- Vegetable oil (for grill)
Directions
- Preheat a gas or charcoal grill on medium-high heat (350°F) for 15 minutes. Soak skewers in water for 20 minutes.
- In a small bowl, stir peanut butter, water, 1½ tablespoons Rub Some Rib and lime juice. Cover with plastic wrap until ready to serve.
- Cut chicken breasts diagonally into ½-inch-thick strips. Thread each chicken strip onto a skewer, weaving it in and out of the skewer. Sprinkle chicken skewers with remaining 2½ tablespoons Rub Some Rib.
- Oil a clean kitchen towel and use tongs to coat the hot grill grate with oil. Use tongs to place the chicken skewers on the hot grill grate. Cook the chicken skewers, uncovered, for 10 minutes or until an instant-read thermometer inserted into the chicken reaches 165°F, turning once halfway through cooking. Serve chicken skewers with peanut dipping sauce.
