Why No. 28? These days, smoked brisket on its own is widely considered the king of the Texas barbeque menu. And what better way to celebrate the (barbeque) king than by honoring the state for which it rules. While Texas was part of Mexico in the 1800's, in 1836 it became The Republic of Texas. But in 1845, The Republic of Texas was admitted to the United States Union as the 28th state.
