Chipotle Grilled Vegetables

3 Tbsp Rub Some Heat on Your Meat Chipotle BBQ Rub™

1 bunch asparagus (ends trimmed)

3 bell peppers (red, yellow and green)

1 small red onion, quartered

1 zucchini, sliced lengthwise

2 Tbsp olive oil



1Put vegetables in large shallow dish and drizzle with olive oil.

2Sprinkle with Rub Some Heat on Your Meat Chipotle BBQ Rub. Toss to coat.

3Drain off any excess oil and place vegetables on prepared charcoal grill or indoor electric grill.

4Cook vegetables 3 to 5 minutes, turning once, until just tender. (Vegetables are best if still a bit crisp and not cooked through.)
